WinesandVines.com have highlighted interesting research from the Australian Wine Research Institute examining the role of trace metals in controlling emissions of odorous volatile sulphur compounds. Winemakers are sometimes frustrated by these compounds giving off a ‘rotten eggs smell’, the last thing drinkers want when they cork a quality vintage.
