Many African countries are at risk of mycotoxin contamination after the George Okech from the Food and Agricultural Organisation (FAO) in Zambia reported that dietary exposure to toxins continues to be ‘unacceptably high’. Mycotoxins are naturally occurring metabolites produced by certain moulds and can grow on a variety of agricultural crops such as feed and maize and can have a number of effects on human and animal health if consumed via the food chain. The most prevalent mycotoxins reported in Africa are Aflatoxins, Zearalenone, Deoxynivalenol, T2 toxin, Fumonisins and Ochratoxin A.
